Oatmeal Trail Mix

3/4 cup golden raisins
2 cups rolled oats
1 cup toasted nuts
2 tablespoons honey
 
Mix well. Cook @ 350 degrees on a greased sheet pan for 30 minutes.
 
 

 

Ranch Beans
16 oz pinto beans, cooked
2 cups brown rice, cooked
12 oz corn, defrosted
3 jalapeños, finely diced with seeds
2 bell peppers, finely diced with seeds
Mix well and refrigerate.

 

 

 

Cornbread Bites

1 box Jiffy cornbread

       mix according to directions
2 eggs (in addition to eggs in the mix)
1 head raw broccoli, chopped very fine
½ cup carrots, finely chopped
2 tsp honey

 
Mix well. Cook according to Jiffy cornbread recipe. Pour into small greased muffin pans. Cook according to the Jiffy mix instructions. Let cool. These muffins can be frozen easily. 

 

 

 

Fruit Salad 
2 apples, chopped and seeded
2 pears, chopped and seeded
2 banana, chopped
20 green or red grapes,

       chopped and seeded
1/2 cup millet

 
Mix well and refrigerate.

 

 

 

 

 

 

 

Lentil Mix       
16 oz bag dried lentils, cooked
1 cup brown rice, cooked
3 jalapenos, finely diced with seeds
2 bell peppers, finely diced with seeds
 
Mix well and refrigerate.
 
 
 

Sweet Potato Mash

2 wweet potatoes cooked and peeled
½ cup oatmeal, cooked and drained
½ cup of quinoa, cooked

Mix well and refrigerate.

 

 

 

Vegetable Medley
32 oz. pkg mixed vegetables,defrosted
1 cup brown rice, cooked

(or 1 cup quinoa, cooked)
2 bell peppers, finely diced with seeds

Mix well and refrigerate.

 
 
 
Fresh Sprout Salad
2 cups fresh sprouts
½ cup quinoa, cooked
1 head broccoli, finely chopped
1 cup mixed vegetables, defrosted
 
Mix well and refrigerate.
